5.0 out of 5 stars Super book - demystifies beans and rice!
I'm a returning student and eating out was one of the things I had to give up to survive on my smaller budget. This cookbook helps because I can make meals that I like better than most restaurant food with little fuss and cheap ingredients. The recipes are easy to follow and the introductory content helped me understand the basics of bean preparation so I don't have to...

2.0 out of 5 stars 366 delicious ways to cook rice, beans, and grains
I like a cookbook with pictures. It makes the recipe appetizing and gives a busy housekeeper ideas to serve a nice looking dish to the family. Sometimes an illustration also makes an unclear direction more understandable.

I'm very fond of this book. I received it only a month ago, but I've already made quite a few things out of it and have plans for more. I asked for it for Christmas because I'm a vegetarian and my three staples are listed right in the title.

The pluses of this book: (1) It has recipes for just beans, just grains, or just rice (with different veggies and spices), as well as some for beans with beans and grains/rice. (2) The recipes don't often call for exotic or hard-to-find ingredients. (3) Many recipes are easily modified so as to use whatever beans, grains, or veggies you have on hand. (4) Each recipe includes nutritional information, listing things like calories, fats, and protein per serving.

The one minus I have is perhaps the occasional need to add depth to dishes, especially the soups. Some recipes call for large amounts of water (not soup stock). Although flavour is added by vegetables, chilis, and spices, it sometimes isn't enough with all the water involved. The same can sometimes be said about some rice and bean dishes. But in those cases it's only a matter of adding whatever your favourite stock or spice is to the recipe.

5.0 out of 5 stars Info on Beans, Jun 23 2004

Regarding the "fart" comment earlier - beans have fiber, which moves waste out, avoiding cancers and other intestinal problems. There is actually less gas if people eat enough fiber regularly. Most people don't, so that is what causes gas in the system.

Combining beans and peas (also called legumes) with any kind of seed grain(whole wheat, rice, sesame, corn) results in complete protein. Adding a little dairy like yogurt to the mix, and you have all the possible amino acids. Peanuts, oddly, also are part of the legume family.

5.0 out of 5 stars excellent!, April 27 1998

This cookbook is an excellent resource for both vegetarians and meat eaters alike. Chesman writes in a very easy to read style and her recipes are delicious. Normally I can only find a few recipes in a cookbook I want to try, but there are dozens in this one I am dying to try. The nutritional information is an additional bonus.

This book is good as a reference and the recipes are easy to use and not overly time consuming. There is a lot of variety and the ease of use is good. Serving sizes a little on the large size.

5.0 out of 5 stars A great book, Nov 28 1999

There are many good bean books on the market, but this one is perhaps a cut above the rest. The recipes are easy, delicious, and plentiful. A great addition to your bean book collection, or the only one you'll want if you are creating one.

I'm not a vegetarian, but really enjoy veggie dishes. This book is extremely helpful and full of delicious recipes, featuring many grains that I"ve always wanted to try (quinoa, couscous etc) but had NO idea how to cook them.

I am also a bean lover and this book is filled with many yummy bean recipes that I incorporate into my diet. My fave is the smokey refried black beans that I used to make refried bean burritos. MY FAVE!

This is my staple vegetarian cook book. I should also add, that I have stress induced IBS and I can eat most of these dishes. I highly recommend.
