I have lots of "quick and easy" cookbooks and "cooking for one" books but this is the one I used the most. These dishes are truly easy to make with fewer ingredients and simple procedures. I never thought that orange juice and a touch of butter (and nothing else) can create a wonderful sauce for fish. Better yet, it relies on fresh foods whenever...

This book has a lot of potential. I was disappointed that there were no pictures. Good for those with great imaginations!!

I have lots of "quick and easy" cookbooks and "cooking for one" books but this is the one I used the most. These dishes are truly easy to make with fewer ingredients and simple procedures. I never thought that orange juice and a touch of butter (and nothing else) can create a wonderful sauce for fish. Better yet, it relies on fresh foods whenever possible, so you get true home-made cooking. I live alone but occasionally dine with my boyfriend so this book is perfect for me. I was never disappointed by the recipes even though I sometimes don't measure time or quantities carefully (of course, I am not a complete novice cook either). The book provides 2 sets of ingredients - one for the single diner and another for two. For a few recipes such as Honest Meatloaf (honestly a great basic meatloaf) you have ingredients for two and four servings respectively, as cooking for one would be rather impractical. However, you can easily save or freeze the leftover for another meal. Overall I highly recommend it to singles and couples who don't want much fuss in the kitchen. There are no photos other than the one on the cover, but then again, you will not get disappinted when the food you make doesn't look quite as good as those meticulously arranged by professional food stylist and retouched by creative photographers as in most cookbooks and magazines.

For years I have been tired of using recipes sized for 4 or 8-11 people, then get so tired of the food I've cooked that I never want to make the recipe again.

This book is one of the best cookbooks I have ever invested in. It's a relief not to have to eat leftovers for the rest of the week and not to be afraid to go to the grocery store afraid I'll overspend.

Great tasting recipes you'll never tire of, as there is hardly any leftovers. They're all easy to make. I use this book every week and for entertaining.

My blood sugar has returned to normal (along with my budget)- and it's so concise and meals so tasty, that you want to include them over and over again. Now I eat much more fish and vegetables and have tried new and varied ways of cooking.

The pan-fried catfish and Maryland crabcakes are the bomb. I've learned to poach chicken. Can't wait to get to the ground turkey section.

You can't miss with this cookbook.

I had seen this cookbook on amazon for awhile, but was sort of leery of buying it since it doesn't have any pictures of the recipes, and I usually really like that feature in a cookbook. When I finally did decide to purchase it, I was not disappointed. I have made quite a few recipes from the book already, and have raved about them to everyone I know.

The recipes aren't overly difficult, and are made from food you actually have in your refrigerator - you don't have to run out and buy one or two items just to never use them again. The recipes are usually shown in either 1 or 2 servings or 2 or 4 servings (for things like soup, where it doesn't really make sense to just make 1 serving). The author also gives ideas for what to serve with a recipe, and for what to do with leftovers, etc. This is really handy since you don't have to do a lot of extra thinking about things.

I would definitely recommend this for anyone just getting out on their own, like university students, etc. I even like this cookbook so much that I am buying another copy for my sister. This cookbook is great!

I've been using this cookbook for a few weeks, and pretty much every recipe I pull from it has tasted great. The methods are easy, the author explains everything well, and also notes nutrition information for every dish. The only problems I've had with it are sometimes it seems the servings are very large, and I've also had to up the flavor on a few of the recipes (double the spices, add extra garlic, etc.)

I would recommend this book to anyone who lives by themselves or with one or two other people.

I love this book! The proportions are just right for my husband and myself...no leftovers (unless I want to make that much). The health information is there, and the things I have made from it so far have been terrific! The potato salad is great, as is the potato-leek soup... I am enjoying making something new from it every few days...

I have been looking for a small portion/healthy cookbook for some time and this is the best one that I have found.

I love that it gives the recipies in servings for 1 or 2 portions instead of the regular 4 portions.

A great selection of recipies are available as well. Highly recommended.

Any of the recipes I have tried from this cookbook I have liked. It is nice that the author gives the quantities needed for 1 or 2 or sometimes 4 people so you don't have to worry about adjusting the amounts. The recipes all seem to be very healthy as well. A few that I have tried are the Smoked Turkey & Fruit Salad, Rigatoni alla Calabria, Luau Turkey Loaf & Tuna Salad Monterey. I enjoyed them all. I would recommend this cookbook to anyone who wants recipes for small quantities.

This book is an absolute must-have for anyone who is just starting to cook for themselves. A great gift for the new college student or a recently seperated person who is now off on their own. It not only has great, easy, healthy recipes using common (cheap) ingredients -- but the shopping tips are GREAT. It helps you figure out how to plan food in smaller portions, and gives important calorie, fat and carb counts under each recipe for those using 'points', the Zone or Atkins. I particularly love the pears poached in red wine, and the szechuan chicken in lettuce cups. Food that takes ten minutes to prepare ends up looking and tasting "impressive".

Packed with lots of information, pantry staples, low-fat snack choices and excellent recipes. Recipe ingredients are detailed in two portion sizes (1 and 2 or 2 and 4) and include nutritional info by portion(calorie, fat, sodium, etc.) I've cooked two of the recipes so far and was particularly pleased with the Bachelor's Chicken, am anxious to try the Mexican Lasagna. I highly recommend this book, the recipes are tasty, fast and easy to prepare. I will keep this cookbook close at hand!

I'd like to stress that not only are the recipes in this book good for you, they are TASTY! I have multiplied recipes in this book for dinner parties, and they have been hits! This is cooking pared down to the essentials, but even though the recipes have been reduced in fat, incorporate nutritious ingredients, and have simplified ingredient lists, flavor is still obviously a priority. I cook from this book whenever I can.
