Ce livre s'adresse aux brasseurs maisons qui veulent en apprendre plus sur la levure et comment elle affecte le goût de la bière. C'est un livre qui devrait être lu par tout les brasseurs de niveaux intermédiaires.

Great book with lots of good layman information.
The second half of the book is a little beyond the scope of many homebrewers. However if you wish to learn how to start a small scale biology lab (or are already a biology geek) the later parts of this book are essential!
Starts of with the basics and gives descriptions of simple ways to manage and improve yeast health. Then goes on to get in depth with agar plating and selecting single yeast strains. Finishing with technical gram positive testing for anaerobic/aerobic bacterial infections.
4/5 because it was almost too technical by the end. However If you wish to progress to much more advanced levels of yeast ranching this is the book to start with.

This is a very well written and surprisingly non-technical description of the mechanics of yeast fermentation. There are many practical examples and common mistakes which was very interesting to learn. Highly recommended for the home brewer who wants to understand what is actually happening and how to be consistent between batches and how to get the most out of your yeast. Also very practical for microbrewers as there is a significant amount of info regarding the use of REAL brewing equipment. Lots of detail regarding yeast counting, culturing, cleaning, etc.

Highly reccommend this book to any level of home brewer.

More than just yeast, it also shows the proper way to conduct a beer fermentation.
