Good, but not one of We-Chuan's best,

This review is from: Chinese Rice and Noodles: With Appetizers, Soups and Sweets (Paperback)
I generally enjoyed this book, although there are very few recipes included that I will follow. Mostly, I found it interesting because it illustrates, I think, a something of a new synthesis of Chinese food and Western-style Chinese food. I would not go so far as to say that this book was written with a western reader in mind but it does appear that some western approaches to Chinese food have been utilized in many recipes. The General-Tso's chicken over rice is not quite the same over-breaded and sickly sweet rendition one sees in the west but it does appear to be a bit closer to what one would see in, say, New York rather than Tapei. There is a bit of interesting and useful discussion of various noodles and rice types, but beyond that, most of the actual recipes are not very exciting.
