I was not very impressd with this book, which is written not by a butcher or chef, but by a electronics tech. There are not to many recipes the backyard smoking enthusiest will enjoy unless you want to smoke a cow's heart, and one of the jerkey recipes is copied word for word from the Bradley Smoker recipe book. I returned this book with no hassle.
