About the Author

Jens Casupei is a self-taught cook with a talent for combining simplicity and style. He offers raw food lectures and workshops, consults with raw food restaurants, and is a member of the Danish raw food group, The Raw Tribe. He lives in North Sealand, Denmark.

Designer Vibeke Kaupert has collaborated on several cookbooks, including one for the famous Danish restaurant, Kong Hans, and in 2007 one of her books received the Gourmand World Cookbook Award. She is also a member of The Raw Tribe. She lives on Moen Island, Denmark.

Before buying any book, I read the reviews then get it from my library to make sure it's something I can really benefit from. For anyone looking for a raw foods cookbook whose recipes are gourmet, healthy & fresh without the use of exotic, expensive, hard-to-find ingredients, THE ART OF RAW FOOD is the best of the few raw foods cookbooks I've seen that accomplish this. The layout is well organized, it provides easy reading that actually engages the reader, & beautiful photography accompanies every recipe. But what impressed me most is that not one of these very imaginative recipes requires a dehydrator, & as such eliminates having to wait hours or days for foods to dehydrate before you can eat the meal. Everything is fresh & alive & can be eaten as soon as it is prepared. As another reviewer commented, this is the "essence of raw foods". Of course, any of these recipes could be heated in a dehydrator if preferred (or even in a carefully-watched low oven), but it isn't necessary, making this book an excellent choice for beginners who have no special equipment (& may not wish yet to spend the money), as well as intermediate & advanced raw foods enthusiasts. The introductory chapters are informative & to the point without being overbearing, & all recipes' instructions are easy to follow. No hard-to-find expensive or exotic ingredients are called for (unless you consider avocado oil exotic, but it can always be substituted with cold-pressed olive oil). There is a lot of value for Amazon's price of $26.40 when you consider the content of this book & that it's hardbound, replete with color photography, & uses high quality paper. Finding this book was like striking gold for me, & I'm glad I was able to preview it from my library first - I read it from cover to cover in one day! I intend now to buy it. THE ART OF RAW FOOD will be a valuable & frequently-used addition to my raw foods cookbook collection, & certainly a refreshing "back to basics" alternative from other raw foods cookbooks, although there's nothing "basic" about the quality of its recipes!

I just received this book today and also received my order of subscription organic vegetables so I had to try one of the recipes. I made the recipe on pg. 142, the Pasta with Bechamel Sauce. I didn't have spinach so I used butter leaf lettuce. The Bechamel sauce on pg. 279 called for cashews but I used my Pistachio's instead. Neither did I have Avocado oil so I used organic Olive oil. I have never seen a recipe call for nutmeg along with salt (Himalayan of course) and black pepper in a raw nut sauce to go over a salad but is was good and different! It really complimented the sweet potatoe and peas. This salad had a very unique flavor and I (and my mother) really enjoyed it! I have yet to try any others but the recipes are very simple and basic. Some of which I have dreamed up on my own and used over the years considering how I have been a raw food vegetarian since 1980. But many of the recipes I have never made nor thought of before. I normally watch about combinding proteins, oil and starches together but once in awhile give in to a change for variety. Overall I would say the book is good and I am glad I purchased it because the recipes along with ingredients look really good. Can't wait to try the Sunflower Pate, Lasagna, Sushi, Pad Thai,the Cashew-Stracciatella Ice Cream w/choco nibs and sauce, the Carrot Cake, Vanilla Ice Cream, Mazarin Cake, Chocolate Mousse (w/avocado), Confectionary Rolls, Coconut Puffs, Sinful Chocolate Pie(yes it is giving me a sweet tooth tonight. Each recipe has a color picture which is not the norm. There is something about this book that makes you want to try each and every recipe which I have not experience before with any others. They look easy, good and pretty. If you are a raw foodist, then more than likely you will have pretty much all the ingredients setting on your shelves or in your fridge. (I am really excited about this book because it isn't one of those where you will have to go to the store to purchase additional ingredients that you wouldn't normally have on hand (or couldn't substitute one with) or even run all over town to find that 1 ingredient that makes the recipe work.) It has a good variety of recipes all of which I can see that the ingredients in the recipes will compliment one another making the recipe a success.

Being a raw foods enthusiast, I've enjoyed quite a healthy serving of raw foods (un)cook books. But, this one, I absolutely devoured!

The book starts off with a wonderful overview of raw food. For those who are new to raw foodism, it's a great introduction, and for those who are already raw foodists, it's a great reminder why.

And, oh, the recipes that follow are simply brilliant! They capture the essence of raw food: each recipe features a minimal amount of simple ingredients and steps--there is not one recipe that requires obscure superfoods or a dehydrator--and results in a maximally flavorful creation. Each time I make one of the recipes, I am astounded by the combination of easy preparation and deep deliciousness. This truly is the art of raw foods!

Speaking of art, the photography is as satisfying as the food. Each recipe is accompanied by a mouth-watering photograph which makes trying the recipe even more irresistible. As I page through the book and gawk at these pictures, I get more and more excited to create each recipe.

If I were asked to recommend one raw food recipe book to someone, this one would be it.

point of view by a Foodie, which i am, i just love to eat,..
..and this book is just excellent in its presentation and so
easy to follow, the Big Plus is it is filled with extremely great
Photo's of each recipe,...i am so glad i purchased this exact
book, i have bought other smiliar Vegan Books, but this one
is in a class on it's own,...i plan to actually eat some of the
vegan recipes presented in this BooK,...thank you !!!!!!

Picked up this book in an attempt to expand my diet to a healthier one. We fix what we are used to fixing, until taught new ideas, right? This is a great little book, with a nice variety of foods that sound quite delicious. Great pictures for those that need the visual. Look forward to creating meals that can bring good health to my body.
