Glorious Glorious. How happy I am that I purchased this cake baking book....after 20+ years of home baking I have finally found a recipe book which is well presented, accurately edited and still produces amazingly subtle and wonderful flavours with each cake....I have baked 9 and each one a "raving" success. The icing itself is full of
nuances and suggestions of other worldyness..es.

The cover indicates exactly what is inside, honest, hand made with refined, elegant touches. If I wanted each of my cakes to look like I had spent 20 years as a professional baker, that would be an entirely different matter. Fiona has shown she is able to create for both worlds, with grace, ease and style suited for each of these worlds.

Fiona Cairns has published a recipe book that speaks to my taste buds and those of my "tasting possie", who now phone often to check what I am baking next... Thank you Fiona for taking the time to share your craft and inside information..e..g. 1T flour stops eggs curdling butter and sugar....who knew!

Not only does this book provide some great recipes, but very valuable baking and decorating tips and the pics are beautiful. I love to read about people like Fiona who start off in their kitchens or garages and thru persistance and perseverance attain their dreams. I ordered this book because I heard she was the baker for the royal wedding cake. My mother was born and raised in Leeds and came to the U.S. as a war bride. I spent the night with her and woke up at 4 a.m. to watch the royal wedding together. Never did I realize that my mother would die 3 weeks later at the age of 87. This book is very special to me and while I haven't had the occasion yet to try one of these recipes, I have started a small gluten free baking business and plan to convert some of these to gluten free. While my decorating skills will NEVER match hers, I can't wait to try the fruit cakes and the lavender frosting like the front cover picture. I am in no way disappointed in this book! Thank you Fiona! You are a great inspiration.

A friend of mine showed me this book during a visit to her house. I made up my mind right away to get myself a copy. I pored over every recipe before baking; I was in such indecision as to what to try first! I made the White Chocolate and Cardamom Rosewater Cake. What a delicious cake! The flavors of rose and cardamom just fill the olfactory senses to the limit and really tickle the taste buds! It was an extremely easy cake to make. I would only caution that unless you are used to the scent and flavor of roses, this may be a little overpowering for you and may be something of an acquired taste. I will be making the Family Chocolate Cake next for an upcoming birthday. SO happy I purchased this book!

Glorious! Glorious! This book is for the HOME BAKER, and as such it is approachable, very clear in directions, the steps are uncomplicated and the flavours AMAZING!!! I have baked 9 of the cakes so far in this book. I have been baking for years (20+) and this is the FIRST cake baking book that has delivered on all levels.

My panel of tasters (6 friends, 4 women 2 men, phone now to see when I plan to bake) all agree that Fiona's delicate combinations of proportions and flavours are refined, yet joyful to the taste buds.

This is not a book for those who have spent years in a professional kitchen and wish to reproduce work suitable for William and Kate. The photo on the cover captures the expectations the baker will find in the pages of this generous book.

Fiona Cairns has shown she is capable of both styles, and personally I love her "hand made" style, I love the colours she has chosen for the icing (these taste as fabulous as they look - better!) These cakes represent honestly what they are.....cakes made by real people in a real home kitchen.

For those who want to bake delicious cakes, which work every time, for their family, friends and children this is a must, buy several as gifts, your friends will thank you.

Like a previous reviewer, I admit that I too have never baked a cake from Ms. Cairn's book - though I have spent many hours reading the well-written recipes and admiring the beautiful pictures.

What I believe gives me the authority to write a review of this fine book is that I have had the pleasure of tasting many of the cakes whose recipes are contained within said book. And, having tasted literally hundreds of cakes that my mother has baked throughout her life, in addition to those found in fine bakeries and restaurants, the cakes baked using Ms. Cairn's recipes are the best I have ever eaten in my life.

Without fail, the cakes baked from this book are light, moist and decadent; their flavours and layered an nuanced; and they look like homemade cakes should look - beautiful and full of character.

This book could simply be a gracious addition to any coffee table, but the real magic happens when butter meets sugar, flour meets eggs - and little handmade masterpieces emerge from the oven to delight even the most discerning of palettes.

I dare you to try one of her cakes an not be immediately hooked. This is the cake book to end all cake books. Period.
