The Book of Kale is sure to bring much needed attention to one of the most nutrient-packed vegetable crops in the world. I've researched the nutritional quality of kale for over 12 years and it truly is a superfood. It is high in available nutrients, an excellent source of cancer-fighting glucosinolate compounds, and one of the best sources for carotenoid pigments that contribute to eye health. As a cool-season vegetable, kale grows best in early spring and fall months; however, it is easy to grow year-round in most climates. It is grown as a "baby green" (30 days old), or most often grown to full maturity. Historically, thousand-head kale is the progenitor in which all of the other Brassica oleracea crops (cabbage, broccoli, Brussels sprouts, cauliflower) descended. You will not find a vegetable crop with more nutritional value and historical significance than kale. It is just unfortunate that kale has been relegated to the role of a garnish at the salad bar, or on the plate. Sharon Hanna has provided many ways to enjoy this nutrient-dense vegetable, and hopefully this book will help bring this special crop to the prominence it deserves.

Sharon Hanna's "The Book of Kale: The Easy-to-Grow Superfood 80+ Recipes" is filled with information on lots of different varieties of kale. Did you know that out of all foods, not just vegetables, that kale has a whopping 1000 out of 1000 in the Aggregate Nutrient Density Index scoring system? It's one of the healthiest foods on the planet when you consider nutrient density per calorie. Years ago, when I first read Dr. Joel Fuhrman's books on Foods for Health and realized that kale was way up at the top of the list, I started looking for more ways to get it into my family's meals. I really had no idea what to do with it other than sauteing it with garlic and onions as a nice "greens" dish or blending it into a smoothie. But Hanna's book opens up all kinds of new possibilities. There are recipes sections for Breakfast, (Can you believe it, kale at breakfast?) Starters & Light Meals, Salads, Soups & Stews, Vegetable Dishes & Sides, Pasta, Polenta & Risotto and Main Dishes. My favorites so far are: Kalekopita, Tabouli with Quinoa & Kale (good as a main course salad or to fill wraps), Pasta Puttanesca with Kale and Karefree Kale & Spud Soup with Italian Sausage (I made this with vegan Italian sausage and it turned out just delicious - and easy!) Each recipe is marked with symbols telling whether it's gluten free, vegetarian or vegan. Although we do occasionally eat meat I like to cook vegan at home. It was easy to find vegan substitutions for any meat or cheese products to make the recipes that weren't already vegan. There are 80+ recipes included.

But there is much more to this book than just the recipes. There's a whole section on the nutritional benefits of kale, listing all the different nutrients.

My husband and I eat a lot of kale - almost daily - and usually in a blended drink. This book gives us a lot of ideas of how to incorporate this wonderful green into many different meals. It is easy to follow, and the recipes are not time consuming. We grow kale every year, and although it is easy to grow - there is always something to learn, more varieties to try, and ideas of where to plant this rather attractive green other than the normal "veggie patch". If you are looking for anything innovative or "out of this world" you won't find it here. This book is common sense, with some good ideas and healthy ways to eat your veg.

I like it. I like the descriptions of the different kinds of kale. I like that the author is from Vancouver, so I know her how-to-grow kale instructions will work here. I like that she emphasizes how easy it is to grow kale - that's encouraging for a novice gardener like myself. I like the photos. I like her basic attitude: anyone can grow kale and here's how. I like her history of kale. She's made me appreciate kale even more than I did before and I am more keen to grow kale than I was before.

I'm a little disappointed in the recipes - although I love the photos of the dishes. They're a bit too complicated, most of them, for me, who likes to cook everything in 5 minutes. But she reaffirms that some of the things I'm already dong with kale - chiffonading it and stir frying it with shallots, garlic, leeks, squash or apples or potatos works well. So that's good. Same with chiffonading it and putting it in salads.

So, yes, the book met my expectations.

Before I bought this book I was wondering how one whole book could be devoted to one green veggie. But I found myself so engrossed in reading this book that I would take it to bed with me. Sharon Hanna's writing is very engaging and she knows her subject matter inside and out. The recipes are very creative, exciting and easy to make. I have since bought copies of this book for friends and family and they all agree with me that it's an incredible book and loaded with tons of ideas for making the best and tastiest kale dishes.

There is a lot of great information in the book, besides recipes, but I confess I have not read all that yet...I went straight for the recipes and so far, I've tried several of them and they have ALL exceeded my expectations. Very pleased with this book and will continue to work my way through these healthy, tasty and easy to prepare meals and snacks. I highly recommend it.

Excellent introduction to this superfood at the beginning of this well-laid out book. It was a great Christmas gift.

We made the Savoury Kale Scones with Pumpkin & Cheese; they were delicious; used butternut squash instead of pumpkin.

There was quite a bit of prep required but the result was worth it. We are inspired to grown kale again in the garden this year.

Rather large for using at your kitchen counter but has a great index to find the recipe you want. All the required techniques are explained.
