About the Author
Stephan MacIntyre is the executive chef of Burgoo Bistro, a position he's held since the business's first day. His career in the culinary industry spans 25 years, from apprenticeships in restaurants and catering companies in Montreal to stints with high-end and film catering businesses in Vancouver, with a few restaurant gigs in between. He likes to surf, ski, travel and sample cuisines from around the world. He lives in Vancouver.
Justin Joyce is the President and COO of Forehand Foods Group, better known as Burgoo Bistro and Wing Nuts Restaurants. He's launched, developed and managed many restaurants in Vancouver, including the Funky Armadillo Cafe, Fringe Cafe, Ouisi Bistro and Fear Itself Seasonings, and he's consulted for such multinational franchises as Boston Pizza. He lives in Vancouver.

I have made the Mac and cheese and will make again using less cream and a bit more parmesan. The inclusion on onions, that are strained out later, in the bechamel sauce, was a great idea.
I have also made the sticky toffee pudding, which we all found ways too sweet. Delicous , but even for our English sensibilities, needed to be toned down in the sugar department.
Overall, a fantastic book to have a any cook book fanatics collections. Nice, easy to read and follow. The only extra element I would have liked to have seen was a portion breakdown with calories, fats and sodium levels included.
I shall feel quite smug when I next go to the restaurant, knowing that I can step in and help out the chef, should I be needed. :-)
The book itself is quite nice with glossy colour pictures.
