Great detail, explained well. There is some repetitive chapters that appear everywhere, but the recipe details are great. Nothing less than expected by this great chocolatier.

Really dissapointing. A short, thin manual more than a full fledged book. Not very descriptive and the food styling leaves a lot to be desired. Doesn't match Wybauw's talent and resume and I'm sure his more expensive books may be better. I'm guessing the english translation got the axe in content from the original French version, but who knows? All I know, other than adding to my vast cookbook collection for posterity, not much use for me practically.
