It's from Cook's! We have used several cook books from Cook's and Americas Test Kitchen and you can't go wrong. Every recipe works and tastes great. You can't go wrong.
Not only are the recipes great, the book gives lots of info on the types and cuts of meat along with helpful tips in each recipe.

Outstanding book, like any other book from Americas Test Kitchen. Shows you all cuts of meat and for each one, it shows you how it should be cooked and what pages to go to for appropriate recipes. It is really great and would have liked to have it when I was younger !
