About the Author
Richard Bertinet, born in Brittany and steeped in the breadmaking traditions of France, is a consultant developing specialty breads for the likes of Marks and Spencer and advising businesses such as Sainsbury's. His baking classes are always sold out, and he will be launching his own cooking school in 2005.
