It is an excellent book for learning techiques with some practise on some recipes. I liked it because it explains step by step with pictures. You don`t need anyone or your mum to teach you how to cook. I tried some recipes and worked out. Me, my family and an our guest liked the result. Highly recommended.

Much more than a collection of recipes, this "encyclopedia" covers all of the fundamentals for American/European cooking. The information is presented in a way that reinforces learning while simultaneously encouraging creativity & experimentation. Quite simply, this is the most important cookbook I own.
