This book is just perfect! It is the new Joy of Cooking, with more modern recipes, less sugar, and so beautifully illustrated. It gives you little cooking lessons in a simplified manner. And there is only one recipe for a two-page spread. PERFECT! This will become a classic, a book to pass down to your children! Perfect for the beginner, or one like me who just needs the basic to make my cooking a little bit more tasty. LOVE IT. It covers snacks, appetizers, breakfast, meats, vegetables and desserts. It is not leaving my kitchen counter.

This is the best cookbook investment I have ever made. My mother was not a good cook, so I didn't learn much from her. I was never satisfied with the results I got cooking red meat and the information I got from friends about how to cook a good steak never helped. Now I know why! Every friend and every cookbook left out the essentials - let the steak warm up outside the fridge before cooking, pat dry with a paper towel (to ensure it sears rather than steams) and let rest for five minutes after removing from heat (cutting into it immediately releases the juices you want IN the steak). No one told me! I fail to understand how any cookbook could leave out these key steps. But they did. But now I know, and I thank Mark Bittman for that. Worth the price to me for just those pieces of information!

Bought it first as a gift, then one for myself, then again (twice) as gifts! Have received feedback from the first recipient, who was so pleased to finally be able to make a decent poached egg after following the instructions in this book. She had also followed the instructions for a standing rib roast, and it turned out perfectly! She is so pleased with this book.

Best cookbook I have ever seen to date, highly recommend to anyone who wants a "practical" cookbook, one where you don't need to drive 20 miles to go buy 1 ingredient from a specialty shop. Everything in this book is simple and easy to cook, and the best part is there is a plethora of variations for every recipe for those who want to try different flavors.

Which Bittman book to buy depends on your experience level. I've been cooking for over 20 years, and even though there aren't pictures, I think I would have benefited from buying "How to Cook Everything" instead of "the basics." That being said, I made one of the beef dishes from this book and my wife claimed it was the best beef she'd ever tasted. My only complaint, and it's a minor one, is that some of the dishes take a really long time to cook, simple as they are. But I guess that's the price you pay to cook something properly. This isn't "Meals in Minutes" but the results are well worth the effort if you are willing to put in the time.

I am really enjoying this cookbook. The photos (of which there are many) are fantastic, the instructions are clear and concise, and the recipes are very, very good. Most of the recipes call for ingredients that most people will have on-hand and if not, aren't hard to find in any supermarket. This is an excellent book for those people who want to learn to cook, or for those of us who want to brush up on the basics.

This book has probably been the most influential book i have ever bought, it makes cooking seem simple and understandable. Mark Bittman has brought professional cooking, to everyone of all skill levels, and especially those who aspire to cook nice meals at home, but never had the confidence to make the attempt.
