The Ultra model is a 10-in-1, allowing you to pressure cook, slow cook, saute, make yogourt, and more. I've made soups, stews, pasta, chicken, mashed potatoes, and a bunch of other dishes and everything (everything!) has turned out great. There are tons of wonderful recipes included with the IP and there are all kinds in the IP app, online, and in some great cookbooks. (I highly recommend The Instant Pot® Electric Pressure Cooker Cookbook: Easy Recipes for Fast & Healthy Meals and The New Pressure Cooker Cookbook: A Tantalizing Collection of Over 200 Delicious Recipes for Quick, Easy, and Healthy Meals.
I have the 6 quart IP, and it is just the right size for a family of three, especially if you like leftovers. I sometimes cook for more people, and I've found I can squeak out a main dish for 5-6 from this model. If you regularly cook for a big group I'd recommend the 8 quart IP.
The controls are very easy to use and very responsive. It takes no effort at all to set up a cooking session and press Start. The screen is big, bright and well labelled.
The IP does come with a short power cord, but the manual explains that this is so it is less like that the pot will be knocked over. You will want to make sure you can place you IP near a power outlet and in a position where it can safely vent (e.g. not directly underneath a cabinet).
I love being able to cook a full meal in less than half the time it would take on the stove. It is great to put everything in the pot, turn it on, and then walk away knowing it will come out great. Some of my old standbys, like chicken and dumplings, taste better out of the IP!
As an aside, I recommend stocking up on a few extra silicone rings as they do absorb scents. One for savour dishes and one for sweet dishes is a good idea (and an extra just in case). I also recommend the Instant Pot Ceramic Coated Non-Stick Inner Cooking Pot, 6 Quart especially if you will be making creamy or cheesy dishes.

- Modern and sleek appearance: LCD display and central dial (it's similar to T-Fal Cook4me pressure cooker).
- Pressure release knob - I can control pressure release and safely speed the process up, without covering the countertop with liquids.
- On-the-go setting adjustments.
- Ultra remembers my last customization.
So far I have used Ultra to cook chicken broth, soups, oatmeal, vegetables, cereals, pork, beef and ribs.
So far, the best results I have achieved while using customized features (Ultra).
The oatmeal program didn't work for me at all, for it was saying that oatmeal "burns," and required more water than I'd wish to, so now I'm using customized non-pressure program applied through Ultra option.
The given opportunity to prepare a nice, hearty soup in no-time added a variety of dishes to our winter meals rotation.
A word about accessories.
The steam rack that comes with Ultra is not convenient, so I'm using T-Fal Cook4me steaming basket, that perfectly fits and does a great job.
Also, T-Fal Cook4me has an original ceramic coated non-stick pot, and its quality is superb, real-deal non-stick cookware, amazingly easy to clean, durable and proved itself over time.
When I purchased Instant Pot Ultra, I wanted to get a similar ceramic-coated pot for IP as well, so I bought it, but was disappointed right out of the box for its cheap quality is so evident. The ceramic-coated pot's internal surface is somewhat grainy and had a couple of tiny sharp bumps.
I have returned the product, for it doesn't meet the standards of ceramic-coated cookware according to my experience.

- First, I was hoping a 3 qt mini would be enough for me (single guy). I can tell you, while it being OK, I outgrew it on the first day. I believe 6 qt is the way to go, even for a single person. It isn't just about the amount of food you make. You can do so much more with it. No comparison!
- Second, the ultra does not really have any functional differences from the DUO model, apart from different interface. 10 in 1 - is just marketing. I bought a 6 qt DUO, and let me tell you - it is way more convenient to use, since you have buttons instead of a pesky dial, and the venting mechanism is much more robust. The Ultra looks better though. But it comes at the cost of user friendliness and higher price.
I am returning my 3qt Ultra and keeping the 6qt DUO. I love it so much more!!

It doesn't take more than a couple minutes to get to full pressure and start the cooktime, and the steam release button works very rapidly.
Though i haven't yet decided on what accessory set[s] to buy, I know at least I want a springform pan: I kluged a form to make a cheesecake in this device, as it is the easiest bain marie, and I was amazed to find it came out really well (it looked pretty wobbly right out of the pot, but it firmed up nicely in the refrigerator). I have cooked 3 pounds of chicken breast on the bone in less than 8 minutes, it was moist and tender, and the bones remained soft enough to give them to my dog - he's a terrier who gnaws everything to dust and doesn't gulp his food, but I don't give him bones from roast chicken, only boiled. Because pressure cooking uses less water than regular boiling, more of the flavor stays in the meat. I also cooked a big pork chop on the bone for 3 minutes after browning it a bit (using the saute setting, then adding water and sealing) and it was nicely tender despite being not a bit pink inside (i used a salty solution rather than plain water). I have yet to make yogurt, but i used the yogurt setting to foster a rapid ferment of fruit wine (found IP instructions on the internet) that turned out great (alternate between venting and not venting the developing CO2); I'm thinking it might also work for other ferments that a low heat promotes, such as kimchi, sauerkraut, tofu misozuke, etc -- i'm not into kombucha but maybe it would work for that too. I'm looking forward to using it for water-bath canning (the pressure is not high enough for true pressure canning, you need the Instant Pot Max for that), but it can sterilize empty jars and lids, and then substitute for a canning kettle waterbath for jams and pickles. Maybe the 8qt is a better choice if you do *a lot* of canning jams, fruit, pickles and sauerkraut (high acid foods don't need pressure canning), but for the amount I do the 6qt will suffice, and it takes up enough room on the counter, I can't imagine how big the 8qt's footprint is.
I'm also looking forward to doing beans in it in a much shorter timeframe than with a slowcooker (tho there is also a slowcooker setting on this pot), because dry beans are cheaper but previously took a lot of planning to use. Now if I want to make sweet red bean baste steambuns, I can do it all in one day without a pot on the stove to watch. i'm notorious for getting distracted and burning pots with beans or rice on the stove, that's why I bought a ricecooker and a crockpot -- both of which can now be retired, since the Instant Pot also did 2 cups of a wild and brown rice mixture, normally at least a 40-minute project in the rice cooker and inevitably if the wild rice is fully softened, the brown rice kernels have exploded, but if the brown rice is done perfectly the wild rice is still a bit too tough... in the IP they *both* came out perfectly cooked, in just 25 minutes, with only 2 cups of stock to 2 cups of dry rice!
This has quickly become my favorite kitchen gadget, especially in the hot summer when I don't want to turn the oven or even rangetop on. The Instant Pot contains virtually all its heat until you release the pressure, and even then it's not nearly as warming of the kitchen as traditional cooking, and its easy to just position it right under the ceiling vent so the steam rises up and out of the house!
It doesn't do everything, of course -- you'll never make a pizza, a baguette, or a crackly-skin roast bird in an Instant Pot -- but there is so much it does, in such a short time. I doubted I would ever buy one when I first heard about them, but I'm sold now. I might even get a mini to have for smaller meals, just so I use less electricity.
I'll upgrade if IP ever comes out with a WiFi IP that can hold 7 quart jars and still reach 15psi. Otherwise, the Ultra does everything I need. I specifically chose this model for the "Ultra" function, which allows me to set temperature parameters other than the preset buttons. I don't need the WiFi IP because the Ultra has a time delay function...and who really needs to control or check their crockpot from a phone app? The whole reason you use a crockpot is to set it and forget it, right? Although I like the sous vide function and 15psi capability of the Max, the Ultra can still sous vide using the Ultra function. The Max isn't available in an 8qt size, so it can only fit 4 pint jars for canning, which is kind of useless. Plus, the reviews stated the Max takes too long to heat up compared to the other models, and the sous vide and 15psi functions were "suspect." So, I'll let IP work out those bugs before I upgrade. For the price point, the Ultra gives me the best value for my money.
PREVIOUSLY: I received my 8 qt Instant Pot Ultra five days earlier than expected. GREAT JOB shipping it quickly and safely! It's in perfect condition and all the extras were included.
I did the initial test run, as suggested. It worked well. I will be cooking sous vide steaks tonight using the Ultra function, yogurt tomorrow using the program button, and pressure cooking something from the IP cookbook tomorrow night. I'll update my review to let you know how it worked.
I'm so glad I chose the 8 qt over the 6 qt. even though we're empty nesters. It takes up less space than my previous crockpot. I plan on using my IP for weekly food prep and daily meals. This size will be perfect!
I plan on buying all the IP accessories rather than the offbrand ones due to some of the problems others have encountered. I'll update my review in a month or so to let you know how they all work.

I have the 6qt IP duo and love it. It is fantastic for everything that it does, but sometimes I need to make bigger batches for my family of 8... we often scrape out the bottom of the pot and then snack on other foods when I make a one pot dish.
So I decided I needed an 8 quart pot. My husband saw the glean in my eye while we were looking at the few different options that amazon had to offer. The Ultra has it all.
From the better venting design (hello no more worrying about the kids venting the pot!) and auto lock feature (I’m in love! Probably the #1 mistake I make with my Duo).
Being able to set the temperature and time to be able to use it to Sous Vide foods without an additional appliance? Genius.
Being able to sterilize with a single button is genius and gets rid of yet another bulky, clunky piece of plastic I didn’t need in my kitchen.
The manual states that it’s safe to water bath can in as well which is another amazing feature that means less lugging more equipment out of deeper storage when I just want to process a batch or two of jelly!
I can’t say enough wonderful things about this over the Duo.
I love my Duo, and it will still have a permanent place in my kitchen, without question, but will more than likely be used for sides, yogurt, and desserts instead of main course.
Now I can feed my army!

I would like the removable cord the Duo has! The Duo has a completely separate power cord that is heavier and feels much more sturdy than the small permanently attached cord on the Ultra. (Not something I would send it back over, and certainly not a big deal, but it is very convenient to unplug the unit and leave the power cord in the kitchen when taking the IP to the table or bar to serve. The cord dangles and gets in the way or becomes a handle for tiny people to pull on)
I would like to see a rack that spanned the 8qt ultra similarly to the 6qt span, not the same rack with bigger handles. It’s flimsy at best, and the bigger pot means cooking bigger quantities, the rack needs to hold more weight, but it was barely updated to accommodate the bigger pot, and eggs fall right off the edge, while in the 6qt, eggs have no room to fall off the edge.
It still fits under my short cabinet heights, and is every bit as amazing as I had hoped!

I have the 6qt IP duo and love it. It is fantastic for everything that it does, but sometimes I need to make bigger batches for my family of 8... we often scrape out the bottom of the pot and then snack on other foods when I make a one pot dish.
So I decided I needed an 8 quart pot. My husband saw the glean in my eye while we were looking at the few different options that amazon had to offer. The Ultra has it all.
From the better venting design (hello no more worrying about the kids venting the pot!) and auto lock feature (I’m in love! Probably the #1 mistake I make with my Duo).
Being able to set the temperature and time to be able to use it to Sous Vide foods without an additional appliance? Genius.
Being able to sterilize with a single button is genius and gets rid of yet another bulky, clunky piece of plastic I didn’t need in my kitchen.
The manual states that it’s safe to water bath can in as well which is another amazing feature that means less lugging more equipment out of deeper storage when I just want to process a batch or two of jelly!
I can’t say enough wonderful things about this over the Duo.
I love my Duo, and it will still have a permanent place in my kitchen, without question, but will more than likely be used for sides, yogurt, and desserts instead of main course.
Now I can feed my army!

As a single empty nester, who had long days at work, I was hardly using my stove, most meals were microwaved as I was too exhausted to cook, or I would eat leftovers from restaurant visits. I yearned for my favorite meals.. not to be found in a restaurant, but didn’t have the energy to cook them. I owned 5 stove top pressure cookers/ pressure pans and even an electric one from Cuisinart in all sizes from 3 qt to 12 qt as I cook Indian food but I wasn’t using them any more - some had issues with building pressure, others whistled and spewed out too much stuff. I resisted buying the Instant pot as I already had so many and didn’t have any place to store one more thing. But then so many good reviews prompted me to get one. I’m so glad I did.
Urvashi Pitres website twosleevers and her books helped me cut down time for some very traditional recipes and I also got the idea of cooking lentils in the main pot and stacking rice pan on top on a trivet. That was the first dish I made, pressure cooked in 10 minutes. The most time I took was in washing the rice and lentils...amazing! My favorite dish done in minutes, oh the joy! No mess, no fuss, not even a whistle, no babysitting the pressure cooker and no need to check. Since then I haven’t looked back.
The Ultra has so many options but I mainly use Sauté and Pressure cook every time. I love the screen that tells you exactly what’s going on - whether it’s heating or starting to pressure cook...it demystifies the pot. I can also change time mid cycle with a press and turn of the knob if I think I’ve set too little or too much time. I love the flexibility. It can also act as a Sous-vide but I haven’t tried that. But being able to cook fresh and delicious pasta with fresh tomatoes and garlic, from scratch with uncooked pasta (yes, no need to preboil pasta) in 6 minutes, oh yeah! and you can steam veggies at the same time, just stack ‘em! LOVE IT! My poor stove envies it as it is getting used as counter space and hasn’t been turned on in a while!
Update Nov 2020: The 6 qt IP is going really well, and I just got the 3 quart size, to do things like make yogurt, make smaller quantities of food, and also be able to have 2 going at once. An Instant Pot FB group suggested buying one to take on road trips, and 3qt is perfect for that for 2-3 people. With a little bit of prep, one can cook beautiful meals all in the instant pot on a vacation, when no good food options are available and even when the room does not have a stove. All you need is a table and a plug point. It's hard when you're on a low carb diet and the only option available in town is pizza and burgers. I can indulge once, but every day is too much for my system, IP makes it easier to stick to healthier foods even on a road trip.
