Enter Neilson's 2% and whole milk. These worked fantastically!!! They both whipped into a thick and foamy froth, the perfect consistency, and delicious on top of a cappuccino sprinkled with cocoa .
As for heating milk for hot chocolate I tried it two ways 1) by mixing the sugar and cocoa in a cup with a little milk until was a syrup and then pouring the warm milk over it and stirring, and 2) combining the sugar, cocoa and milk in the frother and letting it do the mixing. I prefer the taste and simplicity of method #2 but it does require a little more clean up effort. Nothing a small green nylon scrubby sponge can't handle with ease.
