I absolutely love this book! My husband and I try to eat meatless meals on a regular basis, and this book is a great addition to my kitchen. Many of the recipes in this book will become staples for my family. They are well thought out, and easy to prepare. Every recipe I tried was absolutely delicious. I recommend this book for anyone interested in eating healthy, yet delicious food.

Having been a "lacto ovo" vegetarian for the past 15 years I am always interested in new ways to create uncomplicated to put together veggie dishes (to go along with "omnivore hubby prepared and eaten by" dishes. I am especially fond of quick and easy casserole combos. I bought this book primarily to try out the asparagus casseroles. Very good as written; however, I always use fresh asparagus. (Yes, it is available year round where I live.) I have not tried out all the recipes; however, the ones I did try were easy to assemble and quite tasty. Very interesting series by this cookbook author. This book has 40 recipes with some rather catchy titles such as Carpet Bag Tatters, Five Soup Casserole, Lord Charley's Cream Spinach and Sweet Potato Crunch. I prefer a traditional flip back and forth hard copy recipe book; however, I am beginning to find that one on my ipad or kindle is rather convenient and certainly does not collect dust and occupy shelf space. I just may purchase a few more for gifts and maybe help save a tree at the same time.

I am always taking dishes to work for our many pot luck meetings, etc. I have been busy over the last 4 days trying some of the recipes & made the Five Soup Casserole recipe - it made a lot & my co-workers really liked it (plus see my review on cookies). I plan on trying the Cajun Rice, Oven Sliced Potatoes & Bourbon BBQ Beans. All look simple & easy.
