Pierre Hermé, chef de file des pâtissiers français, a su apporter en quelques années une touche de goût et de modernité à sa profession. Célébré jusqu’au Japon et aux États-Unis, il est surnommé « Picasso of Pastry » par le magazine Vogue. Héritier de quatre générations de boulangers-pâtissiers alsaciens, Pierre Hermé a commencé sa carrière à l’âge de quatorze ans auprès de Gaston Lenôtre. Il est devenu très vite chef-pâtissier chez Fauchon, puis a apporté son savoir-faire à Ladurée, avant d’ouvrir ses propres enseignes à Tokyo et à Paris. Avec lui, les décors sont simplifiés, les techniques repensées, en s’affranchissant des références au passé et à l’enfance.
