About the Author

Marc Vetri is the chef and founder of Philadelphia’s Vetri Family of Restaurants, which operates a collection of the country’s most critically acclaimed Italian restaurants: Vetri, Osteria (Philadelphia and Moorestown, NJ), Amis, Alla Spina, Pizzeria Vetri, and Lo Spiedo. Classically trained in Bergamo, Italy, Vetri is known the world over for bringing a bold, contemporary sensibility to classic Italian cooking. He is a member of Food & Wine magazine’s 1999 “Best New Chefs” class and the 2005 winner of the James Beard Award for “Best Chef Mid-Atlantic.” He is also the author of two cookbooks, Il Viaggio di Vetri and Rustic Italian Food. Outside the kitchen, Vetri is the driving force behind the Vetri Foundation, a non-profit organization whose mission is to help kids experience the connection between healthy eating and healthy living. He lives in Philadelphia with his wife, Megan, and their three children. 

David Joachim has authored, edited, or collaborated on more than forty cookbooks, including the multi-award-winner The Science of Good Food and million-copy bestselling series A Man, A Can, A Plan. My favourite book about pasta. Not just for the recipes: Vetri gives you all sorts of science and history along the way.This is aimed at the intermediate-advanced pasta maker. My only quibble is that he aims too high - he doesn't talk as much to the home chef with a small pasta machine or plastic extruder, as he does to restaurants and rich people who can afford $2,000 kitchen tools. But it's a good read and offers lots of things to aim at.

Amazing pasta book. Inspiring stories, great recipes and extremely well thought out. One of my favorite parts of the book and something that I feel really illustrates how great this book truly is are the pasta dough recipes. The book goes through using different types of flour so that you can make the dough out of whats available to you.

I find a lot of recipes will force their restrictions onto you where as this book feels like its trying to work with you and encourages you to experiment. If you are a pasta-lover at all then I would really recommend picking up this book, its the Rolls-Royce of pasta books and you will find yourself going back to it again and again for both inspiration and recipes.

Do not buy this book for the pictures; do not buy it for the great recipes; buy this book to understand pasta. It is an in depth exploration of pasta laid out in a way and using language the non professional cook can easily comprehend, interspersed with delicious recipes. Vetri will tell you all about different flours, protein contents, their role in pasta making and why different types are used for different pasta. Why does pasta turn from a pliable dough to a creamy, yet chewy pocket of delight when cooked? Vetri's got that covered too. Want to know how to properly sauce a pasta? Chef Vetri's got your back.
