In keeping with the recipes that were featured in Dr. Esselstyn's book Prevent and Reverse Heart Disease these recipes offer dishes that are relatively easy to make with ingredients that are easy to find and the results are dishes that allow the flavours of the ingredients to shine without the oil, salt or sugar, what a concept!

I love the fact that I don't need some exotic spice or ingredient that is next to impossible to find as is the case with some plant-based cookbooks. I appreciate the relative simplicity of the ingredients that go into each recipe and the ease with which I can put the entire dish together and it tastes so delicious!

With many of the vegan or natural cookbooks going heavy on the "healthy oils" theme, it is so wonderful to have this cookbook available for those of us who have health conditions that do not permit us to use much, if any oil in our cooking. Finding plant-based recipes with no fat or oil or nuts is NOT easy, especially ones that do not taste like cardboard.

I highly recommend this book for anyone looking to cook whole-food, plant based dishes without fat and oil, salt and sugar whether they just want to eat better or have a health condition. You'll know it was lovingly and carefully put together when you try the recipes. Well worth the price!

I got this book last week and have already made several of the recipes. One of my favourite things so far is the Tomato Chutney! I can see a lot of meals that this could be used.

I've always been a picker when it comes to meat, I don't like fat or gristle so it wasn't a big stretch to switch to a plant based diet after watching Forks Over Knives. Between this and the two Rip Esselstyn books I have a lot of variety and the recipes are very easy. The ease of preparation, cooking and clean up, as well as no calorie counting, really draw me to this lifestyle. I don't enjoy cooking when it takes over an hour to prepare a meal for one or two people (and the dishes are easy to clean because there is no fat!).

Buy this book. Learn to cook. This stuff really works and tastes great.

But, if you're a salt, sugar and fat addict and want to believe you need lots of butter or coconut oil to be healthy, steer clear. And good luck to you....

I saw Dr. Esselstyn and his charming wife Ann in person a couple of years ago. These folks are the real deal. The research is real. The patients are still alive, as are some of mine. Pills and surgery just bypass the problem, but the right foods will do the job!
