As a big home cook, I've been slowly piecing together better quality and these shears from Shun / Kershaw caught my eye after America's Test Kitchen reviewed them.
Build Quality: Well built, no wiggle room from the notch that locks the two blades together. There is a visible seam on the outer edges and quite a bit feature-wise built in.
Sharpness: Very sharp, but oddly not the sharpest I've used out of the box. On regular stock white 8.5x11" paper it can glide (push cut through without chomping through) fairly easily but needs to be positioned with leverage to do so instead of easily gliding. Cuts through chicken like no one's business and the bone notch along the blade is interesting, but I'm not sure it helped.
Cost: Being on sale, it's an easy no brainer buy for an enthusiast who wants to invest in something they can keep for a very long time and it's worth sharpening! Very
