Shun“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection. Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see. |
Handcrafted in JapanShun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world. |
Knife Steel is EssentialHeat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process. |
Quality and PerformanceShun is the exact moment when a fruit has reached its ideal ripeness, when a vegetable is at its very best, or when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time. Shun Cutlery proudly takes its name from this Japanese culinary tradition of eating the freshest food at the perfect moment. We took this name to honor this seasonal, mindful way of eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too. |

Shun Premier
The first thing that catches the eye about the beautiful Shun Premier series is its magnificent tsuchime (tsoo-CHEE-may) finish. This hammered finish combined with Premier's mirror blade polish and intricately layered Damascus, gives Shun Premier a look that is at once rustic and sophisticated.
But the real beauty of Premier is how it performs. Premier is designed to provide exceptionally agile handling. The lightweight, razor-sharp blades are quick and precise. The palm swell on the handle nestles into the hand to provide confident control - for both smaller and larger hands. The embossed endcap and brass ring provide both balance and beauty.
Pakkawood Handle
Shun Premier features a PakkaWood Handle that offers a comfortable grip. Walnut-colored PakkaWood is durable, and won't harbor bacteria. The embossed endcap adds beauty and balance.
The handle features a full composite tang that adds strength and balance.
16 Degree Cutting Edge
Like all Shun knives, the Premier line features a 16 degree cutting edge that is hand sharpened and razor sharp. The blade has a double-bevel, quick taper, and flat ground.
VG-MAX Cutting Core
Shun Premier features our VG-MAX steel, the newest of the VG line of "super steels". Available only from Shun, this extremely fine-grained steel has been enhanced to offer "maximum" performance, strength, corrosion resistance, and a sharp, long-lasting edge.
The hammered tsuchime finish helps release food food easily when cutting.

I recently got into smoking meat, which involves A LOT of prep work and post-smoke cutting. Especially cutting excess fat from a brisket. Yikes! I also needed a good knife for filleting salmon, black cod and other whole fish.
The Shun meets or exceeds all my expectations in terms of sharpness and ease-of-use. It is truly a pleasure to use. I feel like a surgeon as I am cutting up the meat. Its sooo accurate. Aesthetically, it is also a thing of beauty. Which is not really important for a knife, but still ...
So, Shuns are great ... yada yada yada.
But, the point I want to make in this review is to compare it (from the Premier line) with the Shun Classic line. My other two Shuns are both Classics. One a hollow ground Santoku and a Slicing knife. Other than the aesthetics, all three perform equivalently and take a super fine edge. I would be indifferent between choosing to cut with a Premier or a Classic. I bought the Premier on Prime Day, priced $20 more than the Classic, which was not included in the Prime sale. I would do it again. But the current $40 difference ... meh. Maybe a bridge too far.
One other thing I will mention is its use as a fillet knife. The Shun has a super fine tip. Great for digging in and making precision cuts. Many fillet knives are longer (e.g. 9"), but more importantly flexible. If you have any fillet experience or watch some videos, skinning a fillet requires getting the knife blade as close to the skin as possible. Bending the blade on the table (skin side down) to make the skinning cut. The Shun is very stiff, and also a short for a larger fish. I may end up getting an additional fillet knife, e.g. a Bubba 9-inch Tapered Flex fillet knife.

I know it is a Boning/Fillet knife but this is a hands on test on fruits and vegetables.
Tomato, rest the blade on top and pull back and the shear weight of the knife will cut through without resistance!
Carrot, can cut so thin the slices are transparent!
Bell pepper, scary fast, like a hot knife in butter!
Raw chicken, (trimming excess fat off) Simply amazing, this is why I bought this knife!! It cuts through meat and fat so easy, it's scary! Do not be careless and cut your fingers! Kiss them goodbye!
Raw beef, again like a hot knife through butter!
Just use the curve of the blade do the work, flex your wrist and don't cut yourself!
One of the sharpest blades I have ever used and own! Just buy it! Treat yourself now!!
Upon slicing the 22lb shoulder to something more manageable I simply used the weight/gravity of the meat itself applied to the knife to slice. I never understood exactly what "cut like butter" was after all my $40 knife sets all failed me. This knife did exactly that. Look forward to passing this set to my daughter some day. This and the ultimate utility knife are my favorite knifes in this set because of the beauty and raver sharp! Thank you Shun!
