Abrams and Caratozzolo show that with a bare minimum of planning, the cook can serve varied, nutritious, and attractive meals. Most of the secret lies in keeping a pantry stocked with plenty of staples so that only a few fresh ingredients need be ready in the refrigerator or picked up quickly at the grocery store on the way home. For those who haven't caught on to this "secret," the authors lay out a list of staples to keep on hand, and they provide recipes that can move to the table in 20 to 45 minutes. My boyfriend and I have made several of the recipes and they've all been delicious. Not only are they quick and easy to make, but they're nutritionally conscious as well - as detailed at the bottom of each recipe. And there is a great variety of dishes to choose from. Shopping is made easy as the ingredients are divided into "staples" (of which one would most likely have on-hand) and "main ingredients" (which you might need to buy). But the ingredients are not hard to find and often times, we already have them, so we could whip up any number of recipes.
With our crazy schedules, it has been a new-found, fun activity for us to pick a new recipe out of the book and make it together. And it has definitely saved us a lot of money from going out to restaurants just for convenience, and a lot of fat from those enticingly fast fast-food places. We can have a delicious, healthy meal prepared and ready to eat in practically the same amount of time it would've taken us to get in the car, drive over there, order, wait, pay, wait, get it and drive back home.
The authors put a lot of thought into creating this book, even down to the spiral binding, which allows it to lie flat and stay open! I look forward to experiencing many more of the other dishes offered in this book.
This book became the perfect solution for me, in that these recipes are simple to make, require little ingredients, and most of all little experience in cooking! They are giving me a solid base for an arsenal of various recipes to use and to answer that not so nearly as dreadful question for me.
My youngest son watched me pull it out the other day (I have a few cookie recipes pasted in the back cover as well) and commented that he wants this book when I die. I think I'll surprise him with his own copy when he moves off to college (and I'll even put my recipe for home made chocolate chip cookies in the back for good measure.
Finally, as my biggest endorsement for this cookbook: I am a single mom of three. I work long hours and I cook 5-6 nights a week.
This book has made that possible.
