Product Description

In the follow-up to his e-book, The Vibrant Caribbean Pot: 60 Traditional and Fusion Recipes Vol. 1., Chris De La Rosa of CaribbeanPot.com adds 40 additional recipes, includes a helpful introductory section to assist readers in navigating the Caribbean kitchen and, in the process, demystifies the notion that island cooking is challenging. Packed with Chris' personal anecdotes and memories of growing up in Trinidad and Tobago, and preparation and cooking tips - accompanied by mouthwatering photography to inspire-this collection opens the door to the robust and unique flavours of the Caribbean in a fun and educational manner. Drawing from various Caribbean islands in an effortless way, the array of dishes is divided into six distinct sections - Meat & Poultry, Seafood, Vegetarian, Sauces, Condiments and Marinades, Drinks, and Sweet & Savoury Endings - ensuring there is something for every foodie. A focus on easily accessible ingredients allows readers from all corners of the world to make delicacies such as Ultimate Curry Chicken, Jerk Pork Sliders, Fried Okra with Saltfish, Stewed Pumpkin with Shrimp, A Delectable Corn Soup, Trinbago Allo Pie, Peanut Punch, Sorrel, Cucumber Chutney, Shadow Beni Garlic Sauce, Coconut Bake, Cassava Pone and much more. Meanwhile, a 22-page introductory section takes readers through every aspect of cooking the Caribbean way. It includes tips on cleaning chicken and washing rice, removing the salt from saltfish, caramelizing meat and more; and familiarizes readers with spices, herbs, and flavours commonly found in Caribbean cuisine. The Vibrant Caribbean Pot: 100 Traditional and Fusion recipes Vol. 2, will not only expand your kitchen repertoire but also awaken your tastebuds with each delectable dish you master.

I have tried alot of recipes from Chris De La Rosa on his www.caribbeanpot.com website and I have never been disappointed! So much so when my husband sees me cooking he would ask "Is that recipe from Caribbeanpot.com?" If I only make the mistake and say no, he would tell me he is not eating it! Hubby started coming home for lunch when I started trying recipes!

I have to support Chris (yes we on a first name basis) because he has truly helped me to become a better cook and given me the confidence to experiment with new dishes because I am confident that if it is a Chris De La Rosa recipe then it WILL taste GREAT!!!

This book is exactly what I needed for Caribbean recipes. I have been following Chis for a while and currently use a lot of his recipes that i received for free. Now I have them in one place. The recipes are simple enough that amateur cooks like me can follow. Hope that the next book will include more Caribbean drinks.

Every West Indian should have this recipe book!! The stories remind me of my childhood - so many of us can relate to them. The the photos and Chris' narrative combined makes for a great keeper! I have made many of these dishes and they are very easy to follow. A great gift for someone dear to you but make sure you get your own copy FIRST!!!!!!!!!!! Well done Chris, looking forward to the next one :-)

Chris puts a lot of passion into every recipe presented in this collection and it shows up in his love of Carribean tradition and authenticity. Many of these dishes are personal favourites from my vast travels here and there, always a ray of warm sunshine on a cold Canadian winter night. The text translates faithfully to pure comfort food with plenty of options to make it your own way.
