I own way to many kitchen shears (scissors). I have the Shun 7300, the KAI version of those, the Victorinox take apart, the LivingGo, and others.
For normal day to day kitchen use, I find these the most comfortable jack-of-all-traits pair that I pick up first.
So what I like:
- very easy to clean with take apart and put back together
- hold for a small hand (for whole family to use) all the way to large hand (which I can use comfortably)
- simple profile with no extra bottle openers or lid openers that snag on things (or things you might be even cutting)
- sharp and hold their edge
- sturdy
- once aging easy to take apart/reassemble where you get to clean every single section from the raw chicken you might cut, with no rusting
Where these are lacking:
- cutting the larger chicken bones. ... So good for butterflying a chicken, but not good for cutting through leg or thigh bones.
