Sharpest Knife in our kitchen!

Overall, this is a very nice knife. If you obtain one of these, you will not be disappointed! It’s extremely sharp and able to flawlessly cut through the toughest produce. A very comfortable handle and was nicely made; able to handle more torque while cutting due to the design. It has become the most favorite knife in my kitchen!
-Knife was packaged nicely. Plastic tips to prevent the blade from puncturing or cutting the shipping materials. This appears to be a trade mark from this company.
-Package includes a nice plastic sheath and a small sharpening stone.
-Wooden box is a flawless design. I have never seen this type of hinge design, which I believe will last for a very long time. This is a solid wooden box, not pressboard.
-The knife is about 13 inches long and a 1/16th inch thick blade, (Blade 8 inches)
-The wooden handle is very smooth and comfortable to hold.
-The point where the handle makes contact with the blade is a solid piece of metal. Handle and blade metal are one continuous piece. However, instead of only having a 1/16” metal handle, the manufacturer increased the thickness of the metal to give the assembly much more strength. This rounded metal portion of the handle appears to be molded along with the blade. The point being is that this is not a simple 1/16 inch blade that extends through to the end of the handle, but enlarges to a one inch diameter, giving it much more support and strength for cutting, enabling it to cut through bones as well. The user can place more pressure on the blade without the fear of breaking it.
-My wife also likes the leaf pattern on the side of the blades (shown on the box). While I’m not an expert, I suspect that this pattern prevents the food from sticking to the slides of the knife after it has been sliced; for example, when cutting a tomato, each slice separated from the knife. Other knives that I’ve used, I had to push the cut piece off the knife with my fingers. This was not the case while using this knife. Smoothly cuts old as well as fresh fruit.
-Wife is an expert fruit carver, it takes a lot to impress her. However, she is extremely satisfied with this knife. The Damascus blade is now her most favorite cutting blade and is regularly using it during fruit carving as well as household routine cooking. Due to its size, this blade doesn’t cut very small details within the fruit; however, it is an excellent tool for preparing the fruit, easily cutting the thick skin from pumpkins, squash, watermelons, and other such fruits.

Beautiful knife that preforms wonderfully

The packaging was beautiful. I would be very proud to give this as a gift because of how it is presented. Once I started to use the knife I was completely blown away at the performance. The blade is stupid sharp and slices through everything I threw at it easily. It slices tomatoes paper thin and also cleaves through a chicken with no problems. I am a bit of a steel nerd and the Aus-10 damascus is a solid choice for this price point. Damascus is typically a little weaker than other knives, so I am hoping that the strength of the Aus-10 offsets any of that. The handle is made of wood, so consideration must be taken on how it is cleaned. I definitely wouldn't put it in the dishwasher. I put a quick coat of furniture wax on my handle just to make sure nothing happened to it in the dry climate I live in. The balance of the knife is just as good as any of the Wusthof knives I currently own. I have found myself reaching for this one more often than any other knife I own. The narrow tang on this knife actually works well. I am very, very pleased with this knife and would recommend it as a special gift or for your own kitchen.

I bought this knife to replace an old mercer knife i had grown out of. I was starting a new job as a sauce cook at a very high volume restaurant. I have put this knife through its paces and it has held up. Its not strong on its sides and can bend if too much pressure is applied if you're trying to wedge something. but as far as precision cutting and keeping an edge. I would put this as a great mid range knife. I will be buying again. Hopefully, the next one will not disappoint.
