Struggling to make these recipes

I was really looking forward to try out some of the recipes in this book however, the more I went through it, the more I struggled with the ingredients. Coming from a less urban area, I was unable to find many of the ingredients at my local chain stores. What I was able to find in specialty shops or online was also rather costly.
I also try to avoid soy for thyroid reasons so a lot of the tofu recipes weren't for me.
As I keep my eye out for new ingredients, I'll indeed try out some of the recipes (and change my rating if I feel necessary). For now however, I just found the book discouraging.
