Tasty, but salty and need more veggies...

I tasted these Thai Peanut Rice Noodles for the first time tonight and there are a few things I will change when making them again... They are tasty, but I found the flavour salty, even though there is only 14% DV of sodium in half a package, which is lower than many similar products. And there is no creamy sauce... the sauce packet is a dry powder which doesn't get as creamy as I had hoped. Next time, I will add a Tbsp. of unsalted peanut butter to get a creamy sauce. As another reviewer also noted, these could benefit from adding vegetables. I will double the fresh beansprouts, and add thinly shredded Napa cabbage leaves, julienned carrots, thinly sliced celery, coloured peppers... it really would improve the dish, plus reduce the sodium. I enjoyed a squeeze of lime juice and Thai ginger chili sauce over the finished dish. NOTE: Be sure to rinse the soak-cooked noodles very well in the cold water, as the rice starch can become slimy.
